Curiously enough, we may already have an answer to this question. Sunset Shimmer studied under Princess Celestia for some time. The official comics tells us this much. That all changed when she laid eyes on the portal to the human world. In the mirror, Sunset saw a vision where she is an alicorn and the ruler of Equestria. From that day on she believed that was her destiny. Princess Celestia prohibited Sunset from learning about the portal because her student was not yet ready. Sunset persisted almost everyday growing only more annoyed every time her mentor denied her the knowledge she wanted.
Sunset Shimmer ended up seeing Princess Celestia as a hinderance, an object that was stopping her from achieving her destiny. It finally got to the point where Sunset took matters into her own hooves and ran through the portal to gain what she believed was rightfully hers. Here we see how determined our subject has been known to be. Sunset Shimmer literally left behind her own world in search of what she believed was a better life. So if this can be used as precedent then Sunset is bound to do it again, right? She seemed to be living her life one day at a time. By the time she had decided to jump through the portal she literally had nothing tying her down to Equestria.
This is what made leaving such an easy decision for her. Like I mentioned before, Sunset Shimmer now has friends who love her. They treat her like family. She is clearly happy living in the human world. Sunset is living a much better life than the one she had before in Equestria. In addition to having loving friends she has also earned the respect of Canterlot High. The important thing to take away from all of this is that, at the moment, Sunset Shimmer has the closest thing that she ever had to a loving family.

Incidentally, a similar type of clash is also a very iconic occurrence between The Hero and his Rival in Naruto. Establishing Character Moment : Each of the first three films opens with a scene focusing on Sunset Shimmer either before or after the opening credits, to show her Character Development in various stage of progress. Then before entering the mirror portal, she says to Twilight "sorry it had to be this way, Princess," sneering the last word.
