Британское управление продуктовыми стандартами FSA нашло простой выход: если придерживаться здорового питания, вообще не добавлять соль в еду, а продукты выбирать с содержанием соли менее 1, 25 г натрия соответственно в них должна быть меньше 0,5 г — проблема будет решена. И вообще современный человек, употребляющий в пищу мясные, молочные, рыбные, соленые и копченые продукты, вполне может обходиться без того, чтобы досаливать еду. А в случае чего недосол легче устранить, чем пересол. Организм отрегулирует все сам Слушали все эти призывы ученые из Калифорнии и взяли и провели свое исследование. Участвовало в нем 11 тысяч человек. А длилось оно 17 лет. Результаты ошеломили даже тех, кто его проводил. Выяснилось: опасным для здоровья может быть не только высокое, но и низкое содержание этой приправы в пище. Медики неожиданно обнаружили, что повышенное потребление хлорида натрия снижает риск смерти от сердечно-сосудистых и некоторых иных заболеваний.
Не совсем верно утверждение и о том, что "белая смерть" задерживает воду в организме, повышает кровяное давление, усложняет работу почек. Это справедливо лишь в том случае, если многократно превышать минимальную норму соли при уже имеющемся "букете" болезней сердца и почек. И еще одно немаловажное обстоятельство. Соль действует на нас не в гордом одиночестве, а в сочетании с другими продуктами. И это воздействие настолько сложное, что вычленить из него влияние только "белой смерти" вряд ли когда-нибудь удастся. К любопытным результатам привели и исследования болгарских и канадских медиков, изучивших народности, употребляющие в пищу много соли например, буряты и монголы солят даже чай. Оказывается, у представителей этих народов гипертония встречается даже реже, чем у тех, кто ограничивает употребление соленой пищи. Вывод: соль опасна только для тех, кто генетически предрасположен к гипертонии. Более того — калифорнийские ученые уверены: "передозировка" человечеству не угрожает.
Организм сам все отрегулирует. Люди, не ограничивающие употребление соли, все равно в целом усваивают от 2700 до 4900 миллиграммов NaCl в день. Стоит переборщить, как через некоторое время без всякой подсказки врачей перейдешь на более пресную пищу. Выходит, сколько нам употребить соли, определяет мозг, и он же не дает нам переусердствовать. Если же мы сядем на бессолевую диету, организм обязательно захочет добрать количество соли до нужного уровня — вот тут-то и начнутся проблемы. Ведь и у человека, и у животных недостаток соли губительно сказывается на скорости реакции и силе, то есть напрямую влияет у человека — на работоспособность, у животных — на их способность добывать пищу. Человек, который недоедает соли, ощущает слабость, сонливость, бывает, что появляются головокружение, тошнота, иногда он полностью перестает ощущать вкус того или иного продукта. Что для чего Соль — удивительный продукт. Мы вполне можем без нее обойтись, но нас прямо-таки тянет на соленое.
И что бы там ни говорили врачи о ее вреде, совершенно отказаться от этой специи способны единицы. Поэтому врачи все чаще говорят о том, что надо не только ограничить потребление соли, но и выбрать для себя максимально полезную разновидность этого продукта.
